Ingredients
4 boneless, skinless chicken breasts
2 cups all-purpose flour
4 large eggs, beaten
2 cups breadcrumbs
1 cup grated Parmesan cheese
2 tbsp Italian seasoning
1 tbsp garlic powder
1 tsp salt
1/2 tsp black pepper
1/2 cup olive oil
2 cups marinara sauce
1 cup cherry tomatoes, halved
1 cup shredded mozzarella cheese
1/4 cup fresh basil leaves, chopped
Instructions
1. Preheat your oven to 375°F (190°C).
2. Season flour with salt and pepper in a shallow bowl.
3. Dredge each chicken breast in the flour, then dip in beaten eggs, and finally coat with a mixture of breadcrumbs, Parmesan cheese, Italian seasoning, and garlic powder.
4. In a large skillet, heat olive oil over medium-high heat. Fry the chicken breasts until golden brown on both sides, about 4 minutes per side.
5. Transfer chicken breasts to a baking dish. Scatter halved cherry tomatoes over the chicken.
6. Pour marinara sauce over the chicken, ensuring each breast is covered. Sprinkle shredded mozzarella cheese on top.
7. Bake in the preheated oven for 25 minutes, or until chicken is cooked through and cheese is bubbly.
8. Garnish with chopped fresh basil before serving.
