Ingredients

2 boneless, skinless chicken breasts
1 cup all-purpose flour
2 large eggs
1 tablespoon water
3/4 cup breadcrumbs
1/2 cup grated Parmesan cheese
1 tablespoon fresh thyme
1 tablespoon fresh oregano
1 teaspoon lemon zest
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup marinara sauce
4 ounces fresh mozzarella cheese, sliced
2 tablespoons olive oil
1 tablespoon chopped fresh basil (for garnish)

Instructions

1. Preheat oven to 375°F (190°C).
2. Pound chicken breasts to an even thickness.
3. Set up a breading station with flour, beaten eggs mixed with water, and a mix of breadcrumbs, Parmesan cheese, fresh thyme, oregano, lemon zest, salt, and pepper.
4. Dredge each chicken breast in flour, shake off excess, dip in egg wash, then coat with breadcrumb mixture.
