Herb-Infused Slow Cooker Beef Roast

Ingredients

3 lbs beef chuck roast
2 tbsp olive oil
1 large onion, sliced
4 cloves garlic, minced
1 cup beef broth
1 cup red wine
2 tbsp tomato paste
2 bay leaves
1 tsp dried rosemary
1 tsp dried thyme
1 tsp salt
1/2 tsp black pepper
2 large carrots, chopped
3 potatoes, quartered

Instructions

1. Heat olive oil in a pan over medium heat. Sear the beef roast on all sides until browned.
2. Place the beef roast in the slow cooker. Add sliced onion, minced garlic, beef broth, red wine, and tomato paste.
3. Sprinkle rosemary, thyme, salt, and pepper over the roast. Add bay leaves.
4. Arrange chopped carrots and quartered potatoes around the roast.
5. Cover and cook on low for 8 hours or until the beef is tender.
6. Remove bay leaves before serving.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat in a saucepan over medium heat until warmed through, adding a splash of beef broth if needed.
