Herb-Infused Root Vegetable Beef Stew

Ingredients
2 lbs beef chuck, cubed
1 tbsp olive oil
1 large onion, diced
3 cloves garlic, minced
4 cups beef broth
2 cups water
2 carrots, sliced
2 parsnips, sliced
3 potatoes, cubed
1 turnip, cubed
2 tbsp tomato paste
1 bay leaf
1 tsp thyme
1 tsp rosemary
Salt and pepper to taste
2 tbsp flour (optional for thickening)
Instructions
1. In a large pot, heat olive oil over medium heat.
2. Add the beef cubes and brown on all sides.
3. Remove the beef and set aside.
4. In the same pot, add onions and garlic, sauté until fragrant.
5. Stir in the tomato paste, cooking for 2 minutes.
6. Return the beef to the pot, add beef broth, water, bay leaf, thyme, and rosemary.
7. Bring to a simmer, then reduce heat and cover, cooking for 1.5 hours.
8. Add carrots, parsnips, potatoes, and turnip.
9. Simmer uncovered for an additional 30 minutes, or until vegetables are tender.
10. If using, mix flour with a little water and stir into the stew to thicken.
11. Adjust seasoning with salt and pepper before serving.
Storage
Store the stew in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat gently on the stove over low heat or in the microwave until hot throughout.
