Ingredients
3 lbs boneless pork loin
2 tbsp olive oil
2 tsp salt
1 tsp black pepper
2 tsp dried rosemary
2 tsp dried thyme
1 tsp garlic powder
1/2 cup chicken broth
2 tbsp unsalted butter
Instructions
1. Preheat your oven to 375°F.
2. In a small bowl, mix together the olive oil, salt, black pepper, rosemary, thyme, and garlic powder.
3. Rub the spice mixture all over the pork loin.
4. Place the pork loin in a roasting pan and pour the chicken broth into the base of the pan.
5. Roast in the oven for 60-75 minutes, or until the internal temperature reaches 145°F.
6. Melt the butter and baste the pork loin with it halfway through cooking.
7. Once cooked, remove the pork from the oven and let it rest for 15 minutes before slicing.

Store leftovers in an airtight container in the refrigerator for up to 3 days.
