Ingredients

3 lbs boneless pork shoulder
1/4 cup honey
4 cloves garlic, minced
2 tbsp fresh rosemary, chopped
2 tbsp fresh thyme, chopped
1 cup chicken broth
1 tbsp apple cider vinegar
1 large onion, sliced
1/2 tsp salt
1/2 tsp black pepper

Instructions

1. Season the pork shoulder with salt and pepper on all sides.
2. In a small bowl, mix honey, minced garlic, rosemary, thyme, and apple cider vinegar to create a paste.
3. Rub the honey-herb paste evenly over the pork shoulder.
4. Place sliced onions at the bottom of the crock pot and lay the pork shoulder on top.
5. Pour chicken broth around the sides of the pork.
6. Cover and cook on low for 8 hours or until the pork is tender and easily shredded.
7. Once cooked, remove the pork from the crock pot and let it rest for a few minutes before slicing.

Storage

Store leftover pork roast in an airtight container in the refrigerator for up to 3 days.

Reheating

To reheat, place slices of pork in a baking dish, cover with foil, and warm in a 325°F oven for about 15-20 minutes.
