Herb-Infused Chicken Parmesan

Ingredients

4 boneless skinless chicken breasts
1 cup all-purpose flour
2 large eggs
1 cup panko breadcrumbs
1/2 cup grated Parmesan cheese
1/4 cup chopped fresh basil
1/4 cup chopped fresh parsley
1 tsp garlic powder
1 tsp onion powder
1/2 tsp salt
1/2 tsp black pepper
2 cups marinara sauce
1 cup shredded mozzarella cheese
1/4 cup olive oil
1 tbsp butter

Instructions

1. Preheat your oven to 375°F (190°C).
2. Pound the chicken breasts to an even thickness and season with salt and black pepper.
3. Set up a breading station with three shallow dishes: one with flour, one with beaten eggs, and one with a mixture of panko breadcrumbs, Parmesan cheese, basil, parsley, garlic powder, and onion powder.
4. Dredge each chicken breast in flour, then dip in eggs, and finally coat with the breadcrumb mixture.
5. Heat olive oil and butter in a large oven-safe skillet over medium-high heat.
6. Cook the chicken breasts for 3-4 minutes on each side until golden brown.
7. Pour marinara sauce over the chicken and sprinkle with mozzarella cheese.
8. Transfer the skillet to the oven and bake for 15-20 minutes, or until the chicken is cooked through and the cheese is bubbly and golden.
9. Garnish with additional fresh basil and parsley before serving.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat in a preheated oven at 350°F (175°C) for 10-15 minutes or until warmed through.
