Ingredients

2 lbs pork tenderloin
2 tbsp olive oil
1 tbsp Dijon mustard
1 tbsp fresh rosemary, chopped
1 tbsp fresh thyme, chopped
2 cloves garlic, minced
1 tsp salt
1/2 tsp black pepper
1/2 tsp paprika
1 lemon, zested
1/4 cup chicken broth

Instructions

1. Preheat your oven to 400°F (200°C).
2. In a small bowl, mix together olive oil, Dijon mustard, rosemary, thyme, garlic, salt, pepper, and paprika to form a paste.
3. Rub the paste all over the pork tenderloin, ensuring it is evenly coated.
4. Heat a skillet over medium-high heat and sear the tenderloin on all sides until golden brown, about 5 minutes.
5. Transfer the seared pork to a roasting pan and pour the chicken broth into the bottom of the pan.
6. Roast in the preheated oven for 20-25 minutes, or until the internal temperature reaches 145°F (63°C).
7. Remove from the oven and let the tenderloin rest for 5 minutes before slicing.
