Herb-Crusted Rib Roast with Garlic Jus

Ingredients
1 rib roast (approximately 5 lbs)
3 tbsp olive oil
2 tbsp kosher salt
1 tbsp black pepper
4 cloves garlic, minced
1/4 cup fresh rosemary, chopped
1/4 cup fresh thyme, chopped
1 cup beef broth
Instructions
1. Preheat your oven to 450°F.
2. Rub the rib roast with olive oil, salt, and pepper.
3. Combine minced garlic, rosemary, and thyme; press the mixture onto the roast.
4. Place the roast in a roasting pan and bake for 25 minutes.
5. Reduce heat to 325°F and continue roasting until internal temperature reaches 135°F for medium-rare, about 2 hours.
6. Remove from oven and let rest for 15 minutes.
7. In a saucepan, bring beef broth to a simmer and stir in pan drippings to create a garlic jus.
8. Slice the roast and serve with warm garlic jus.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat slices in a preheated 300°F oven covered with foil for 10-15 minutes or until heated through.
