Herb-Crusted Prime Rib with Garlic Jus

Ingredients

1 whole prime rib roast (7-8 lbs)
2 tbsp olive oil
4 cloves garlic, minced
1 tbsp fresh rosemary, chopped
1 tbsp fresh thyme, chopped
1 tbsp black pepper, coarsely ground
2 tbsp kosher salt
1 cup beef broth
1/2 cup red wine

Instructions

1. Preheat your oven to 450°F.
2. In a small bowl, combine minced garlic, rosemary, thyme, black pepper, and kosher salt.
3. Rub the olive oil over the entire prime rib roast.
4. Coat the meat with the garlic and herb mixture, pressing it gently into the surface.
5. Place the roast on a rack in a roasting pan.
6. Roast in the preheated oven for 20 minutes.
7. Reduce the oven temperature to 325°F and continue to roast for approximately 1.5-2 hours, or until the internal temperature reaches 130°F for medium-rare.
8. Transfer the roast to a cutting board and let it rest for 20 minutes before carving.
9. Meanwhile, in the same roasting pan, add beef broth and red wine, scraping up any browned bits from the bottom of the pan.
10. Simmer the jus over medium heat until slightly reduced, about 10 minutes.
11. Strain the jus into a serving bowl and serve alongside the sliced prime rib.

Storage

Store leftover prime rib in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat slices of prime rib gently in a 300°F oven until warmed through, or in a skillet over low heat.
