Herb-Crusted Prime Rib with Garlic Infusion

Ingredients
5 lbs prime rib roast
2 tbsp olive oil
4 cloves garlic, minced
2 tbsp fresh rosemary, chopped
2 tbsp fresh thyme, chopped
1 tbsp salt
1 tbsp black pepper
1 tsp onion powder
1 tsp smoked paprika
Instructions
1. Preheat your oven to 450°F (232°C) and let the prime rib sit at room temperature for about 30 minutes.
2. In a small bowl, combine olive oil, minced garlic, rosemary, thyme, salt, pepper, onion powder, and smoked paprika to form a paste.
3. Rub the herb paste evenly over the entire surface of the prime rib roast.
4. Place the roast in a roasting pan with a rack, fat side up.
5. Roast in the preheated oven for 20 minutes, then reduce the oven temperature to 325°F (163°C) and continue roasting until the internal temperature reaches your desired level of doneness (125°F for rare, 135°F for medium rare, 145°F for medium), approximately 90 minutes more.
6. Remove the roast from the oven and tent it loosely with aluminum foil. Let it rest for at least 20 minutes before carving.
7. Slice and serve with your favorite accompaniments.
Storage
Store any leftover prime rib in an airtight container in the refrigerator for up to 3 days.
Reheating
To reheat, preheat your oven to 250°F (121°C). Place the slices of prime rib in a baking dish with a small amount of beef broth or water, and cover with foil. Heat in the oven for about 20 minutes, or until warmed through.
