Ingredients

1 1/2 lbs pork tenderloin
2 tbsp olive oil
1 tsp salt
1/2 tsp black pepper
1 tbsp minced fresh rosemary
1 tbsp minced fresh thyme
1 tbsp minced garlic
1 cup apple cider
2 tbsp honey
1 tbsp Dijon mustard
1 tbsp apple cider vinegar

Instructions

1. Preheat oven to 400°F (200°C).
2. In a small bowl, mix rosemary, thyme, garlic, salt, and pepper.
3. Rub olive oil over pork tenderloin, then coat with herb mixture.
4. Place pork in a roasting pan and bake for 25-30 minutes.
5. In a saucepan, combine apple cider, honey, and mustard; bring to a boil.
6. Reduce heat and simmer until thickened, about 10 minutes.
7. Add apple cider vinegar and stir; remove from heat.
8. Remove tenderloin from oven, let it rest for 5 minutes, then slice.
9. Drizzle apple cider glaze over sliced pork and serve.

Refrigerate in an airtight container for up to 3 days.

Reheating

Reheat in a preheated 350°F (175°C) oven for 10-15 minutes or until heated through.
