Ingredients
1 1/2 lbs pork tenderloin
1/4 cup Dijon mustard
3 tbsp honey
2 tbsp olive oil
3 cloves garlic, minced
1 tbsp fresh rosemary, chopped
1 tbsp fresh thyme, chopped
1 tsp salt
1/2 tsp black pepper
Instructions
1. Preheat oven to 425°F (220°C).
2. In a small bowl, mix Dijon mustard, honey, olive oil, garlic, rosemary, thyme, salt, and pepper.
3. Rub the pork tenderloin with the honey mustard mixture, coating it evenly.
4. Place the pork on a baking sheet lined with parchment paper.
5. Roast in the preheated oven for 25-30 minutes, or until the internal temperature reaches 145°F (63°C).
6. Let the pork rest for 5 minutes before slicing and serving.
