Ingredients

1 boneless pork loin roast (3-4 lbs)
3 tbsp olive oil
5 cloves garlic, minced
1 tbsp freshly chopped rosemary
1 tbsp freshly chopped thyme
1 tbsp freshly chopped sage
2 tsp kosher salt
1 tsp black pepper
1/2 tsp smoked paprika
2 tbsp dijon mustard

Instructions

1. Preheat your oven to 375°F (190°C).
2. In a small bowl, mix olive oil, garlic, rosemary, thyme, sage, salt, pepper, and smoked paprika to form a paste.
3. Rub the pork loin with dijon mustard, then coat with the herb mixture, pressing it onto the meat.
4. Place the pork on a roasting rack in a roasting pan.
5. Roast in the preheated oven for about 1 hour and 15 minutes or until the internal temperature reaches 145°F (63°C).
6. Let the pork rest for 10 minutes before slicing.

Storage

Refrigerate leftovers in an airtight container for up to 3 days.

Reheating

Preheat oven to 300°F (150°C), wrap slices in aluminum foil, and heat for about 10-15 minutes.
