Herb-Crusted Baked Flounder

Ingredients

1.5 lbs flounder fillets
1 cup panko breadcrumbs
1/2 cup grated Parmesan cheese
2 tbsp fresh parsley, chopped
2 tbsp fresh dill, chopped
1/4 cup unsalted butter, melted
1 tsp garlic powder
1 tsp lemon zest
1/2 tsp salt
1/2 tsp black pepper
1 lemon, cut into wedges for serving

Instructions

1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
2. In a bowl, combine the panko breadcrumbs, Parmesan cheese, parsley, dill, garlic powder, lemon zest, salt, and pepper.
3. Dip each flounder fillet in melted butter, then coat with the breadcrumb mixture, pressing gently to adhere.
4. Arrange the fillets on the prepared baking sheet and bake for 15-18 minutes, or until the fish is cooked through and the topping is golden brown.
5. Serve immediately with lemon wedges.

Storage

Store leftovers in an airtight container in the refrigerator for up to 2 days.

Reheating

Reheat in a preheated oven at 350°F (175°C) for 10 minutes, or until warmed through.
