Herb-Crusted Baked Fish

Ingredients
1.5 lbs fresh white fish fillets
2 tbsp olive oil
1 cup breadcrumbs
1/4 cup grated Parmesan cheese
3 cloves garlic, minced
1 tbsp fresh parsley, chopped
1 tbsp fresh thyme, chopped
1 lemon, zested
Salt and pepper to taste
Instructions
1. Preheat your oven to 400°F.
2. In a bowl, mix breadcrumbs, Parmesan, garlic, parsley, thyme, lemon zest, salt, and pepper.
3. Brush fish fillets with olive oil and coat them with the breadcrumb mixture.
4. Place the fish on a baking sheet lined with parchment paper.
5. Bake in the preheated oven for 15-20 minutes or until the fish is cooked through and flakes easily with a fork.
6. Serve hot with a wedge of lemon.
Storage
Store leftover fish in an airtight container in the refrigerator for up to 2 days.
Reheating
Reheat in a preheated oven at 350°F for 10 minutes or until warmed through, to retain crispiness.
