Ingredients
1.5 lbs cod fillets
1 cup breadcrumbs
1/4 cup grated Parmesan cheese
2 tbsp chopped fresh parsley
2 tbsp chopped fresh dill
1 tsp lemon zest
1/2 tsp salt
1/4 tsp black pepper
2 tbsp olive oil
2 cups cherry tomatoes, halved
1 tbsp balsamic vinegar
1 tbsp honey
1 clove garlic, minced
1 tbsp extra-virgin olive oil
1/4 tsp red pepper flakes
Instructions
1. Preheat the oven to 400°F (200°C).
2. In a bowl, combine breadcrumbs, Parmesan cheese, parsley, dill, lemon zest, salt, and black pepper.
3. Drizzle olive oil over the cod fillets and press the breadcrumb mixture firmly over the top.
4. Place the cod on a baking sheet lined with parchment paper and bake for 15-20 minutes or until the fish flakes easily with a fork.
5. Meanwhile, prepare the tomato relish by combining cherry tomatoes, balsamic vinegar, honey, garlic, extra-virgin olive oil, and red pepper flakes in a bowl.
6. Serve the baked cod topped with the tomato relish.
Storage
Store leftover baked cod in an airtight container in the refrigerator for up to 2 days.
Reheating
To reheat, place the cod in a preheated oven at 350°F (175°C) for about 10 minutes or until warmed through.
