Heirloom Cabbage Soup

Ingredients

1 medium green cabbage, shredded
1 lb ground beef
1 large onion, chopped
3 cloves garlic, minced
4 cups beef broth
2 cups water
2 large carrots, sliced
2 stalks celery, sliced
1 can (14.5 oz) diced tomatoes
1 tbsp olive oil
1 tsp salt
1/2 tsp black pepper
1/2 tsp thyme
1/2 tsp oregano
2 tbsp apple cider vinegar

Instructions

1. In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until onion is translucent.
2. Add ground beef, cook until browned, breaking it up with a spoon.
3. Stir in shredded cabbage, carrots, and celery, cooking for 5 minutes until slightly softened.
4. Add beef broth, water, diced tomatoes, salt, pepper, thyme, and oregano.
5. Bring to a boil, then reduce heat and let simmer for 45 minutes, stirring occasionally, until vegetables are tender.
6. Stir in apple cider vinegar, adjust seasonings to taste.

Storage

Let the soup cool to room temperature, then store in an airtight container in the refrigerator for up to 4 days.

Reheating

Reheat gently on the stove over low heat, stirring occasionally, until warmed through.
