Hearty Veggie Hamburger Soup

Ingredients
1 lb ground beef
2 tbsp olive oil
1 large onion, chopped
3 carrots, sliced
3 celery stalks, sliced
2 cloves garlic, minced
1 can (14.5 oz) diced tomatoes
4 cups beef broth
1 cup frozen corn
1 cup green beans, trimmed and chopped
1 tsp dried thyme
1 tsp dried basil
1/2 tsp black pepper
Salt to taste
Instructions
1. In a large pot, heat olive oil over medium heat. Add the ground beef and cook until browned.
2. Remove beef and set aside. In the same pot, add onion, carrots, celery, and garlic.
3. Sauté vegetables until softened, about 5 minutes.
4. Return the beef to the pot, then add diced tomatoes and beef broth.
5. Stir in corn, green beans, thyme, basil, black pepper, and salt.
6. Bring to a boil, then reduce heat and simmer for 20 minutes, allowing flavors to meld.
7. Serve hot with crusty bread.
Storage
Allow soup to cool completely before transferring to an airtight container. Store in the refrigerator for up to 4 days.
Reheating
Reheat soup on the stovetop over medium heat, stirring occasionally, until hot. Alternatively, microwave in a microwave-safe bowl, stirring every minute until heated through.
