Hearty Tortellini Broth

This Hearty Tortellini Broth is a comforting blend of chicken broth, aromatic herbs, and cheese-filled tortellini, perfect for warming up a chilly day.

Ingredients

1 tbsp olive oil
1 cup diced onions
2 cloves garlic, minced
1 cup diced carrots
1 cup diced celery
6 cups chicken broth
1 tsp dried basil
1 tsp dried oregano
1/2 tsp salt
1/4 tsp black pepper
2 cups cheese tortellini
2 cups fresh spinach
1/4 cup grated Parmesan cheese
2 tbsp chopped parsley

Instructions

Step 1: In a large pot, heat olive oil over medium heat and sauté onions, garlic, carrots, and celery until soft, about 5 minutes.
Step 2: Add chicken broth, dried basil, dried oregano, salt, and black pepper. Bring to a boil.
Step 3: Add tortellini and simmer for 7-9 minutes or until tortellini are cooked through.
Step 4: Stir in spinach until wilted.
Step 5: Serve hot, garnished with Parmesan cheese and parsley.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat on the stove over medium heat until warmed through, adding more broth if necessary.
