Hearty Smoky Lentil Soup

Ingredients
1 tbsp olive oil
1 large onion, chopped
2 cloves garlic, minced
2 carrots, diced
2 celery stalks, diced
1 tsp smoked paprika
1/2 tsp ground cumin
1/4 tsp cayenne pepper
1 cup dried brown lentils
6 cups vegetable broth
1 can (14.5 oz) diced tomatoes
1 tbsp tomato paste
1 bay leaf
Salt and pepper to taste
Juice of 1 lemon
2 tbsp fresh parsley, chopped
Instructions
1. Heat the olive oil in a large pot over medium heat.
2. Add the chopped onion and cook until translucent.
3. Stir in the minced garlic, diced carrots, and celery, and cook until the vegetables are softened.
4. Add the smoked paprika, ground cumin, and cayenne pepper, stirring for another minute.
5. Stir in the brown lentils, vegetable broth, diced tomatoes, tomato paste, and bay leaf.
6. Bring the mixture to a boil, then reduce heat and simmer for 35-40 minutes, or until lentils are tender.
7. Remove the bay leaf and season the soup with salt, pepper, and lemon juice to taste.
8. Serve hot, garnished with fresh parsley.
Storage
Store in an airtight container in the refrigerator for up to 4 days.
Reheating
Reheat gently on the stove over low heat, stirring occasionally, until warmed through.
