Hearty Slow Cooker Herb Lemon Chicken

Ingredients

4 boneless skinless chicken breasts
1/2 cup chicken broth
1/4 cup fresh lemon juice
2 tablespoons olive oil
1 tablespoon lemon zest
3 garlic cloves, minced
1 teaspoon dried thyme
1 teaspoon dried rosemary
1/2 teaspoon salt
1/2 teaspoon black pepper
1 cup baby carrots
1 cup sliced baby potatoes
1/2 cup chopped onion
2 tablespoons fresh parsley, chopped

Instructions

1. In a bowl, mix chicken broth, lemon juice, olive oil, lemon zest, garlic, thyme, rosemary, salt, and pepper.
2. Place chicken breasts at the bottom of the slow cooker.
3. Add baby carrots, potatoes, and onion on top of the chicken.
4. Pour the lemon herb mixture over the chicken and vegetables.
5. Cover and cook on low for 6-7 hours or until chicken is tender and fully cooked.
6. Garnish with fresh parsley before serving.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat in the microwave on medium heat for 2-3 minutes or until warmed through.
