Hearty Slow Cooked Beef Roast

A comforting and savory beef pot roast, slow-cooked to perfection with tender vegetables and rich flavors, making it an ideal choice for a family dinner or special occasion.

Ingredients

3 lbs beef chuck roast
2 tbsp olive oil
1 tsp salt
1/2 tsp black pepper
1 onion, sliced
4 cloves garlic, minced
4 carrots, peeled and chopped
4 celery stalks, chopped
1 cup beef broth
1 cup red wine
2 tbsp tomato paste
2 tbsp Worcestershire sauce
2 sprigs fresh thyme
1 bay leaf
1 lb potatoes, peeled and quartered

Instructions

1. Season the beef roast with salt and pepper.
2. Heat olive oil in a skillet over medium-high heat. Sear the roast on all sides until browned.
3. Transfer the roast to the slow cooker.
4. In the same skillet, sauté the onion and garlic until fragrant.
5. Add the sautéed onion and garlic to the slow cooker.
6. Add carrots, celery, and potatoes around the roast.
7. In a bowl, mix beef broth, red wine, tomato paste, and Worcestershire sauce. Pour over the roast.
8. Add thyme and bay leaf to the slow cooker.
9. Cover and cook on low for 8 hours or until the beef is tender.
10. Remove the bay leaf and thyme sprigs before serving.

Storage

Allow to cool to room temperature, then store in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat gently on the stovetop or in the microwave until heated through.
