Ingredients

2 lbs beef chuck, cubed
3 tbsp olive oil
1 large onion, diced
3 cloves garlic, minced
4 cups beef broth
2 cups water
2 large carrots, sliced
2 stalks celery, chopped
3 large potatoes, diced
1 can (14.5 oz) diced tomatoes
1 cup green beans, trimmed
1 cup corn kernels
1 tsp dried thyme
1 tsp dried rosemary
Salt and pepper to taste

Instructions

1. Heat olive oil in a large pot over medium heat.
2. Add the beef cubes and brown evenly on all sides, about 5 minutes.
3. Remove the beef and set aside.
4. In the same pot, add the onion and sauté until translucent, about 4 minutes.
5. Add the garlic and cook for an additional minute.
6. Return the beef to the pot and add the beef broth and water; bring to a boil.
7. Reduce heat to low and simmer for 45 minutes.
8. Add the carrots, celery, potatoes, tomatoes, green beans, and corn to the pot.
9. Stir in the thyme, rosemary, salt, and pepper.
10. Simmer for another 30 minutes until vegetables are tender.
11. Taste and adjust seasoning if necessary.
