Hearty Ranchero Soup
A robust and flavorful soup featuring savory ground beef, tender beans, and zesty tomatoes, perfect for a comforting meal that is both filling and satisfying.

Ingredients
1 lb ground beef
1 medium onion, chopped
2 cloves garlic, minced
1 can (15 oz) kidney beans, drained and rinsed
1 can (15 oz) black beans, drained and rinsed
1 can (15 oz) diced tomatoes with green chilies
1 can (8 oz) tomato sauce
2 cups beef broth
1 packet (1 oz) ranch dressing mix
1 packet (1 oz) taco seasoning mix
1 cup corn kernels, drained
Salt and pepper to taste
Optional toppings: shredded cheese, sour cream, chopped cilantro, diced avocado
Instructions
1. In a large pot over medium heat, cook the ground beef until browned, about 5-7 minutes.
2. Add the chopped onion and minced garlic to the pot, sautéing until the onion is translucent, approximately 3 minutes.
3. Stir in the kidney beans, black beans, diced tomatoes with green chilies, tomato sauce, and beef broth.
4. Mix in the ranch dressing mix and taco seasoning mix, stirring until well combined.
5. Add the corn kernels, and bring the mixture to a boil.
6. Reduce the heat to low and let the soup simmer for 20 minutes to blend the flavors.
7. Season with salt and pepper to taste, and serve hot with optional toppings.
Storage
Store any leftover soup in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat the soup on the stovetop over medium heat until warmed through, or microwave individual portions for 2-3 minutes, stirring halfway.
