Hearty Potato-Cheddar Soup

A comforting and creamy potato-cheddar soup that warms the soul with every spoonful, perfect for fall and winter months.

Ingredients

2 lbs russet potatoes, peeled and cubed
1 large onion, diced
3 cloves garlic, minced
4 cups chicken broth
2 cups sharp cheddar cheese, shredded
1 cup whole milk
2 tbsp butter
2 tbsp all-purpose flour
Salt and pepper to taste
1/2 cup scallions, sliced for garnish
1/4 cup sour cream for garnish

Instructions

1. In a large pot, melt butter over medium heat. Add diced onion and garlic, cooking until onion is translucent.
2. Stir in flour to create a roux, cooking for about 2 minutes.
3. Gradually add chicken broth, whisking to combine with the roux.
4. Add cubed potatoes to the pot, bringing the mixture to a boil.
5. Reduce heat, cover, and let simmer for 20 minutes or until potatoes are tender.
6. Puree the soup using an immersion blender until smooth.
7. Stir in cheddar cheese and milk, allowing the cheese to melt completely.
8. Season with salt and pepper to taste.
9. Serve hot, garnished with scallions and a dollop of sour cream.

Storage

Store in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat on the stove over medium heat, stirring occasionally until heated through. Alternatively, microwave in a microwave-safe bowl, stirring every minute until warm.
