Hearty Oyster Stew

Ingredients

1 pint fresh oysters
1/4 cup butter
1 cup whole milk
1 cup heavy cream
1 small onion, finely chopped
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1/4 teaspoon celery salt
1 tablespoon fresh parsley, chopped
A dash of hot sauce
Crackers, for serving

Instructions

1. Drain the oysters, reserving the liquid, and set aside.
2. In a large pot, melt the butter over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
3. Stir in the reserved oyster liquid, milk, and cream. Heat gently, but do not let it boil.
4. Add the oysters to the mixture along with salt, pepper, and celery salt. Cook until the oysters start to curl, about 3-5 minutes.
5. Stir in chopped parsley and a dash of hot sauce. Adjust seasoning if necessary.
6. Serve immediately with crackers on the side.

Storage

Store leftover stew in an airtight container in the refrigerator for up to 2 days.

Reheating

Reheat gently in a saucepan over low heat, stirring occasionally, until warmed through. Avoid boiling to preserve texture.
