Ingredients
1 lb ground breakfast sausage
8 large eggs
2 cups whole milk
1 cup shredded cheddar cheese
1/2 cup chopped bell peppers
1/2 cup diced onions
1 tsp salt
1/2 tsp ground black pepper
4 cups cubed day-old bread
1 tsp dried thyme
1/4 cup chopped fresh parsley
Instructions
1. In a skillet over medium heat, cook the breakfast sausage until browned; drain excess fat.
2. In a large bowl, whisk together eggs, milk, salt, pepper, and thyme.
3. Stir in cheddar cheese, bell peppers, onions, cooked sausage, and bread cubes until well combined.
4. Pour the mixture into a greased 9x13 inch baking dish and cover with foil.
5. Refrigerate overnight to allow flavors to meld.
6. Preheat the oven to 350°F (175°C) the next morning.
7. Bake the casserole, covered, for 25 minutes.
8. Remove foil and bake for an additional 15 minutes or until the top is golden brown and the center is set.
9. Garnish with fresh parsley before serving.

Cover the cooled casserole with plastic wrap or transfer portions to airtight containers; refrigerate for up to 3 days.
