8 oz mushrooms, sliced
2 tbsp olive oil

2 cups vegetable broth

1/4 cup soy sauce
1 tsp dried thyme
1/2 tsp black pepper
Salt to taste

Instructions

1. Heat the olive oil in a skillet over medium heat.
2. Add the chopped onions and cook until translucent, about 5 minutes.
3. Stir in the garlic and sliced mushrooms, cooking until the mushrooms are tender, approximately 5 more minutes.
4. Sprinkle the flour over the mushroom mixture, stirring constantly to avoid lumps.
5. Slowly add the vegetable broth, whisking continuously until the mixture thickens.
6. Stir in the soy sauce, thyme, and black pepper.
7. Allow the gravy to simmer for 10 minutes, stirring occasionally.
8. Adjust seasoning with salt to taste.
9. Remove from heat and serve warm.
