Hearty Lemon Ginger Chicken Soup

Ingredients

1 tablespoon olive oil
1 medium onion, diced
2 cloves garlic, minced
1 tablespoon fresh ginger, grated
1 pound boneless chicken thighs
8 cups chicken broth
2 large carrots, sliced
2 celery stalks, sliced
1 lemon, zested and juiced
1 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon fresh parsley, chopped
1/2 teaspoon thyme
1 cup baby spinach

Instructions

1. Heat olive oil in a large pot over medium heat.
2. Add diced onion, garlic, and ginger, sauté until onion is translucent.
3. Add chicken thighs and sear until browned on both sides.
4. Pour in chicken broth and bring to a simmer.
5. Add carrots, celery, lemon zest, lemon juice, salt, and pepper.
6. Cover and simmer for 25 minutes until chicken is cooked through.
7. Remove chicken, shred it with forks, and return to the pot.
8. Stir in parsley, thyme, and baby spinach.
9. Simmer for an additional 5 minutes before serving.

Storage

Store in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat gently over low heat on the stovetop, stirring occasionally, until heated through.
