Hearty Kale Delight
A traditional and nutritious kale salad featuring a vibrant blend of earthy kale, sweet raisins, crunchy almonds, and a zesty lemon vinaigrette.

Ingredients
1 bunch kale, finely chopped
1/4 cup toasted almonds, sliced
1/4 cup raisins
1/2 cup cherry tomatoes, halved
1/4 cup red onion, thinly sliced
1/4 cup grated Parmesan cheese
1/4 cup olive oil
2 tbsp lemon juice
1 tsp Dijon mustard
Salt to taste
Pepper to taste
Instructions
1. Rinse the kale thoroughly and pat dry.
2. In a large bowl, massage the chopped kale with a pinch of salt until it becomes tender.
3. Add sliced almonds, raisins, cherry tomatoes, and red onion to the kale.
4. In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, salt, and pepper to create the dressing.
5. Pour the dressing over the salad and toss until well coated.
6. Sprinkle grated Parmesan cheese on top before serving.
Storage
Store leftover salad in an airtight container in the refrigerator for up to 2 days.
Reheating
This salad is best enjoyed fresh and does not require reheating.
