Hearty Homestyle Potato Soup

Ingredients

4 lbs russet potatoes, peeled and diced
1 large onion, chopped
3 cloves garlic, minced
4 cups chicken broth
2 cups whole milk
1 cup heavy cream
1 cup shredded cheddar cheese
1/2 cup sour cream
4 strips bacon, cooked and crumbled
2 tablespoons butter
1 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon thyme
2 green onions, sliced for garnish

Instructions

1. In a large pot, melt butter over medium heat and sauté onions and garlic until translucent.
2. Add the diced potatoes, chicken broth, salt, pepper, and thyme. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 20 minutes.
3. Use a potato masher to slightly mash the potatoes, leaving some chunks for texture.
4. Stir in milk and heavy cream, then gently heat until warmed through.
5. Add cheddar cheese and stir until melted and smooth.
6. Remove from heat, stir in sour cream and half of the crumbled bacon.
7. Serve hot, garnished with remaining bacon and sliced green onions.

Storage

Store any leftover soup in an airtight container in the refrigerator for up to 3 days.

Reheating

To reheat, place the soup in a pot over medium heat, stirring occasionally until heated through. Add a splash of milk if needed to achieve desired consistency.
