Ingredients

1 lb ground beef
1 large onion, chopped
2 cloves garlic, minced
3 carrots, diced
2 stalks celery, diced
1 red bell pepper, chopped
1 zucchini, sliced
1 cup green beans, trimmed and halved
1 can (14.5 oz) diced tomatoes
4 cups beef broth
2 tbsp olive oil
1 tsp salt
1/2 tsp black pepper
1 tsp dried oregano
1 tsp dried thyme
1 bay leaf
1 tbsp Worcestershire sauce

Instructions

1. In a large pot, heat olive oil over medium heat. Add ground beef, cook until browned, breaking it apart with a spoon. Drain excess fat.
2. Add onion and garlic, sauté until translucent. Stir in carrots, celery, and red bell pepper, cook for 5 minutes.
3. Pour in beef broth and diced tomatoes. Add zucchini, green beans, salt, pepper, oregano, thyme, and bay leaf. Stir well.
4. Bring to a boil, reduce heat to low, cover, and simmer for 30 minutes.
5. Stir in Worcestershire sauce, adjust seasoning to taste. Remove bay leaf before serving.

Storage

Soup can be stored in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat soup on the stovetop over medium heat until warmed through, stirring occasionally.
