Hearty Homestead Stew

A warming, traditional stew that captures the essence of rustic homestead cooking, featuring tender beef, wholesome vegetables, and a rich, savory broth.

Ingredients

2 lbs beef chuck roast, cubed
4 large carrots, sliced
3 medium potatoes, cubed
1 large onion, chopped
3 cloves garlic, minced
2 cups beef broth
1 cup red wine
2 tbsp tomato paste
1 tbsp Worcestershire sauce
1 tsp dried thyme
1 tsp dried rosemary
1 bay leaf
Salt and pepper to taste
2 tbsp olive oil

Instructions

1. Heat olive oil in a large skillet over medium-high heat. Brown the beef chunks on all sides, then transfer to the slow cooker.
2. In the same skillet, add the onion and garlic, sautéing until fragrant, then add to the slow cooker.
3. Add carrots, potatoes, beef broth, red wine, tomato paste, Worcestershire sauce, thyme, rosemary, bay leaf, salt, and pepper to the slow cooker.
4. Cover and cook on low for 8 hours or until beef is fork-tender and vegetables are soft.
5. Remove bay leaf and adjust seasoning as necessary before serving.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat gently in a saucepan over medium heat until warmed through, or microwave individual portions until hot.
