Hearty Homestead Lentil Soup

Ingredients

1 cup dried green lentils
1 tbsp olive oil
1 medium onion, chopped
2 cloves garlic, minced
2 medium carrots, diced
2 celery stalks, diced
1 can (14.5 oz) diced tomatoes
4 cups vegetable broth
1 tsp salt
1/2 tsp black pepper
1/2 tsp dried thyme
1 bay leaf
1 tbsp lemon juice

Instructions

1. Rinse and sort lentils, removing any debris.
2. In a large pot, heat olive oil over medium heat. Add onion and garlic, sautéing until onion is translucent.
3. Stir in carrots and celery, cooking for 5 minutes until softened.
4. Add lentils, tomatoes, and vegetable broth to the pot. Season with salt, pepper, thyme, and bay leaf.
5. Bring to a boil, then reduce heat to low and simmer, covered, for 35-40 minutes, or until lentils are tender.
6. Stir in lemon juice, adjust seasoning if necessary, and serve hot.

Storage

Store in an airtight container in the refrigerator for up to 5 days.

Reheating

Reheat on the stove over medium heat until warmed through, or in a microwave-safe bowl for 2-3 minutes.
