Hearty Homestead Hamburger Soup

A rustic and nourishing soup made with seasoned ground beef, fresh vegetables, and a blend of savory herbs, perfect for cozy family dinners.

Ingredients

1 lb ground beef
1 large onion, diced
3 cloves garlic, minced
2 carrots, diced
2 stalks celery, diced
1 (14.5 oz) can diced tomatoes
4 cups beef broth
1 cup water
1 tsp dried thyme
1 tsp dried basil
Salt and pepper to taste
1 cup frozen peas
1 cup corn kernels
2 cups potatoes, diced

Instructions

1. In a large pot over medium heat, brown the ground beef until fully cooked, approximately 5 minutes, then drain off excess fat.
2. Add the onion and garlic to the pot and sauté until the onion is translucent, about 3 minutes.
3. Stir in the carrots and celery, cooking for another 5 minutes until slightly softened.
4. Add the diced tomatoes, beef broth, water, thyme, basil, salt, and pepper.
5. Bring the mixture to a boil, then reduce the heat and simmer for 20 minutes.
6. Add the potatoes, continuing to simmer for another 15 minutes or until potatoes are tender.
7. Stir in the peas and corn, cooking for an additional 5 minutes.
8. Adjust seasonings to taste and serve hot.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat in a pot over medium heat until warmed through, or microwave in a covered dish for 3-4 minutes.
