Hearty Homestead Beef and Vegetable Soup

Ingredients

1 pound beef stew meat, cubed
2 tablespoons olive oil
1 large onion, chopped
2 cloves garlic, minced
3 carrots, sliced
3 celery stalks, sliced
2 potatoes, cubed
1 can (14.5 ounces) diced tomatoes
4 cups beef broth
1 cup water
1 teaspoon dried thyme
1 teaspoon salt
1/2 teaspoon black pepper
2 cups green beans, trimmed

Instructions

1. In a large pot, heat the olive oil over medium-high heat. Add the beef cubes and sear until browned on all sides.
2. Add the chopped onion and minced garlic to the pot, sauté until the onion becomes translucent.
3. Stir in the carrots, celery, and potatoes, cooking for 5 minutes to combine flavors.
4. Pour in the diced tomatoes, beef broth, and water. Add thyme, salt, and pepper, then bring to a boil.
5. Reduce the heat to low and simmer for 1 hour, until the beef is tender and the vegetables are cooked.
6. Add the green beans and continue to simmer for an additional 15 minutes.
7. Taste and adjust seasonings if needed before serving.

Storage

Store in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat gently on the stovetop over medium heat until warmed through, or microwave in a microwave-safe dish for 2-3 minutes, stirring halfway through.
