Hearty Herbed Chicken Noodle Soup

Ingredients

1 tbsp olive oil
1 medium onion, chopped
2 cloves garlic, minced
2 carrots, sliced
2 celery stalks, sliced
8 cups chicken broth
2 cups cooked chicken, shredded
1 tsp dried thyme
1 tsp dried rosemary
1 tsp dried basil
Salt and pepper to taste
8 oz egg noodles
2 tbsp fresh parsley, chopped
1 tbsp lemon juice

Instructions

1. Heat olive oil over medium heat in a large pot. Add onion and garlic, sauté until softened.
2. Add carrots and celery, cook for another 3-4 minutes.
3. Pour in chicken broth and bring to a boil.
4. Stir in shredded chicken, thyme, rosemary, basil, salt, and pepper.
5. Add egg noodles and reduce heat to a simmer. Cook for 10 minutes or until noodles are tender.
6. Stir in fresh parsley and lemon juice before serving.

Storage

Allow the soup to cool completely. Store in an airtight container in the refrigerator for up to 3 days or freeze for up to 3 months.

Reheating

Reheat gently on the stovetop over medium heat, stirring occasionally, until warmed through.
