Hearty Harvest Soup

Ingredients

2 tbsp olive oil
1 large onion, diced
3 cloves garlic, minced
2 carrots, sliced
2 stalks celery, chopped
1 sweet potato, peeled and cubed
1 zucchini, sliced
1 cup butternut squash, cubed
6 cups vegetable broth
1 can (14 oz) diced tomatoes
1 tsp dried thyme
1 tsp dried rosemary
Salt and pepper to taste

Instructions

1. Heat olive oil in a large pot over medium heat.
2. Add onion and garlic, sauté until fragrant and translucent, about 5 minutes.
3. Stir in carrots and celery, cook for another 5 minutes.
4. Add sweet potato, zucchini, and butternut squash, cooking for 5 minutes more.
5. Pour in vegetable broth and diced tomatoes, stir to combine.
6. Add thyme, rosemary, salt, and pepper. Bring to a boil.
7. Reduce heat to low, cover, and simmer for 30 minutes.
8. Serve hot, garnished with fresh herbs if desired.

Storage

Allow the soup to cool to room temperature and store in an airtight container in the refrigerator for up to 4 days.
