Hearty Ham and Split Pea Soup

Ingredients

2 cups dried split peas
1 lb cooked ham, diced
8 cups water
1 large onion, chopped
2 carrots, sliced
2 celery stalks, sliced
2 cloves garlic, minced
1 bay leaf
1 tsp dried thyme
1 tsp salt
1/2 tsp black pepper

Instructions

1. Rinse split peas thoroughly under cold water.
2. In a large pot, combine split peas, water, and bay leaf. Bring to a boil.
3. Reduce heat to low, cover, and simmer for 30 minutes.
4. Add diced ham, onion, carrots, celery, garlic, thyme, salt, and pepper.
5. Continue to simmer for another 1-1.5 hours, stirring occasionally until peas are tender.
6. Remove bay leaf before serving.

Storage

Store in an airtight container in the refrigerator for up to 3 days or freeze for up to 3 months.

Reheating

Reheat gently on the stove over medium heat, stirring occasionally until hot.
