Hearty Farmhouse Beef Soup

Ingredients
1 lb ground beef
2 tbsp olive oil
1 cup chopped onions
2 cloves garlic, minced
2 cups diced tomatoes, canned with juice
3 cups beef broth
2 cups water
1 cup diced carrots
1 cup chopped celery
1 cup chopped green beans
1 cup corn kernels
1 tsp salt
1/2 tsp black pepper
1 tsp dried basil
1/2 tsp dried oregano
1 bay leaf
Instructions
1. Heat olive oil in a large pot over medium heat. Add ground beef and cook until browned, breaking it into crumbles. Drain excess fat.
2. Stir in onions and garlic; cook until softened, about 5 minutes.
3. Add diced tomatoes, beef broth, water, carrots, celery, green beans, corn, salt, pepper, basil, oregano, and bay leaf. Stir well to combine.
4. Bring to a boil, then reduce heat to a simmer. Cover and cook for 25-30 minutes until vegetables are tender.
5. Remove bay leaf before serving.
Storage
Allow the soup to cool completely before transferring it to an airtight container. Store in the refrigerator for up to 3 days or in the freezer for up to 3 months.
Reheating
To reheat, transfer desired portion to a saucepan and warm over medium heat until heated through. Alternatively, microwave on high in a microwave-safe container for 2-3 minutes, stirring halfway.
