Hearty Dublin Coddle

Ingredients

2 lbs pork sausages
1 lb thick-cut bacon, chopped
2 lbs potatoes, peeled and sliced
3 large onions, sliced
4 cups chicken broth
2 tbsp fresh parsley, chopped
1 tsp black pepper
2 tbsp vegetable oil

Instructions

1. Preheat your oven to 350°F.
2. In a large skillet, heat vegetable oil over medium heat and brown the sausages, then set aside.
3. In the same skillet, cook the bacon until crispy, then remove and drain on paper towels.
4. Layer the potatoes, onions, sausages, and bacon in a large ovenproof dish.
5. Pour the chicken broth over the layered ingredients and season with black pepper.
6. Cover the dish and bake in the preheated oven for 2 hours.
7. Garnish with fresh parsley before serving.

Storage

Allow the stew to cool completely before transferring to an airtight container. Store in the refrigerator for up to 3 days.

Reheating

To reheat, place the stew in a covered ovenproof dish and heat in a preheated 350°F oven for 20-30 minutes, or until heated through.
