Hearty Crockpot Chicken and Noodles

Ingredients

1 lb chicken breasts, boneless and skinless
2 cups chicken broth
1 cup water
1 medium onion, finely chopped
2 cloves garlic, minced
1 tsp salt
1/2 tsp black pepper
1/2 tsp dried thyme
2 cups wide egg noodles
1 cup frozen peas
1 cup sliced carrots
1/2 cup heavy cream

Instructions

1. Place the chicken breasts in the bottom of the crockpot.
2. Pour in the chicken broth and water, then add the chopped onion, garlic, salt, pepper, and thyme.
3. Cover and cook on low for 6 hours or until chicken is tender.
4. Remove chicken from the crockpot, shred it using two forks, and return it to the pot.
5. Stir in the egg noodles, peas, carrots, and heavy cream.
6. Cover and cook for an additional 30-40 minutes until the noodles are tender.
7. Serve warm and enjoy.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat in a saucepan over medium heat until warmed through, adding a splash of broth if needed.
