Hearty Country Vegetable Soup

Ingredients

2 tbsp olive oil
1 large onion, diced
2 cloves garlic, minced
3 carrots, sliced
3 celery stalks, sliced
2 large potatoes, diced
1 cup green beans, chopped
1 cup corn kernels
1 cup diced tomatoes
8 cups vegetable broth
2 bay leaves
1 tsp dried thyme
1 tsp salt
1/2 tsp black pepper
1/4 cup fresh parsley, chopped

Instructions

1. Heat olive oil in a large pot over medium heat.
2. Add onion and garlic, sauté until translucent.
3. Stir in carrots and celery, cook for 5 minutes.
4. Add potatoes, green beans, corn, and tomatoes.
5. Pour in vegetable broth, add bay leaves and thyme.
6. Season with salt and pepper, bring to a boil.
7. Reduce heat, cover, and simmer for 30 minutes.
8. Remove bay leaves, stir in fresh parsley before serving.

Storage

Store leftover soup in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat soup in a pot over medium heat, stirring occasionally until hot, or microwave in a microwave-safe bowl until heated through.
