Ingredients

1 lb spaghetti
1 lb boneless chicken breasts, cubed
2 tbsp olive oil
1 cup onion, chopped
1 cup bell pepper, chopped
2 cloves garlic, minced
1 can (14 oz) diced tomatoes
1 can (10 oz) cream of mushroom soup
1 cup chicken broth
1 cup cheddar cheese, shredded
Salt and pepper to taste
1 tsp Italian seasoning

Instructions

1. Cook spaghetti according to package instructions until al dente, then drain and set aside.
2. In a large skillet, heat olive oil over medium heat. Add cubed chicken and cook until browned and cooked through, about 5-7 minutes.
3. Remove chicken from skillet and set aside. In the same skillet, add onion, bell pepper, and garlic. Sauté until vegetables are softened, about 5 minutes.
4. Add diced tomatoes, cream of mushroom soup, chicken broth, Italian seasoning, salt, and pepper to the skillet. Stir to combine and bring to a simmer.
5. Return chicken to the skillet along with the cooked spaghetti. Toss to coat all ingredients evenly.
6. Sprinkle shredded cheddar cheese over the top, cover, and let the cheese melt, about 2-3 minutes.
