Ingredients
1 whole chicken (3-4 lbs)
2 carrots, sliced
2 celery stalks, sliced
1 onion, chopped
2 garlic cloves, minced
8 cups chicken broth
1 bay leaf
1 tsp salt
1/2 tsp black pepper
1/2 tsp dried thyme
2 cups egg noodles
1 tbsp olive oil
1/4 cup fresh parsley, chopped
Instructions
1. Heat olive oil in a large pot over medium heat.
2. Add onion, garlic, carrots, and celery; sauté until softened, about 5 minutes.
3. Add chicken, chicken broth, bay leaf, salt, pepper, and thyme.
4. Bring to a boil, then reduce heat and simmer for 1 hour, until chicken is cooked through.
5. Remove chicken and shred meat; discard bones and skin.
6. Return shredded chicken to pot and add egg noodles.
7. Simmer for another 10 minutes until noodles are tender.
8. Stir in fresh parsley before serving.
Storage
Refrigerate in an airtight container for up to 3 days.
Reheating
Reheat gently on the stove over low heat until warmed through, or microwave on medium power, stirring occasionally.
