Hearty Chicken and Potato Dumpling Soup

Ingredients

2 lbs chicken breast
4 cups chicken broth
2 cups water
1 cup heavy cream
2 cups diced potatoes
1 cup carrots, sliced
1 cup celery, sliced
1 large onion, diced
3 cloves garlic, minced
2 tsp salt
1 tsp black pepper
1/2 tsp thyme
1/2 tsp rosemary
2 tbsp olive oil
2 cups all-purpose flour
1/2 cup mashed potatoes
1 egg
1/2 tsp baking powder
1/4 cup milk
1 tbsp parsley, chopped

Instructions

1. In a large pot, heat olive oil over medium heat. Add chicken and cook until browned on all sides. Remove and set aside.
2. In the same pot, add onion, garlic, carrots, and celery. Sauté until vegetables are softened.
3. Pour in chicken broth and water, then return chicken to the pot. Add salt, pepper, thyme, and rosemary. Bring to a boil, then reduce heat and simmer for 20 minutes.
4. In a bowl, combine flour, mashed potatoes, egg, baking powder, and milk. Mix until a dough forms. Roll into small balls to create dumplings.
5. Add potatoes and dumplings to the pot and simmer for another 15 minutes, or until dumplings are cooked and potatoes are tender.
6. Stir in heavy cream and chopped parsley. Cook for another 5 minutes, adjusting seasoning as needed.
7. Serve hot with crusty bread or a fresh salad.

Storage

Allow the soup to cool to room temperature, then store in airtight containers in the refrigerator for up to 3 days, or freeze for up to 2 months.

Reheating

Reheat gently on the stove over medium-low heat, stirring occasionally, until heated through. Add a splash of milk or broth if needed to achieve desired consistency.
