Hearty Cauliflower Soup

A rich and warm cauliflower soup with a delicate blend of spices and creamy texture, perfect for chilly days and family gatherings.

Ingredients

1 large head cauliflower, chopped
1 large onion, diced
2 cloves garlic, minced
4 cups chicken broth
1 cup heavy cream
2 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon ground black pepper
1/4 teaspoon nutmeg
2 tablespoons butter

Instructions

1. Heat the olive oil in a large pot over medium heat.
2. Add the diced onion and garlic, sauté until translucent.
3. Add the chopped cauliflower and sauté for an additional 5 minutes.
4. Pour in the chicken broth, cover, and bring to a simmer for 20 minutes or until the cauliflower is tender.
5. Blend the soup until smooth using an immersion blender or transfer in batches to a blender.
6. Return the soup to the pot, stir in the heavy cream, nutmeg, salt, and pepper.
7. Simmer gently for 10 more minutes, stirring occasionally.
8. Stir in the butter before serving.

Storage

Store in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat on the stovetop over low heat, stirring frequently, or in the microwave on medium power.
