Hearty Cabbage Detox Soup

Ingredients

1 tablespoon olive oil
1 medium onion, chopped
2 cloves garlic, minced
4 cups green cabbage, chopped
1 bell pepper, diced
2 large carrots, sliced
2 stalks celery, chopped
6 cups low-sodium vegetable broth
1 can (14.5 oz) diced tomatoes
1 teaspoon dried basil
1/2 teaspoon dried oregano
Salt and pepper to taste

Instructions

1. Heat olive oil in a large pot over medium heat.
2. Add chopped onion and garlic, sauté for 3-4 minutes until translucent.
3. Stir in cabbage, bell pepper, carrots, and celery, cook for 5-7 minutes until vegetables begin to soften.
4. Pour in vegetable broth and diced tomatoes, bring to a boil.
5. Add dried basil, oregano, salt, and pepper, reduce heat and simmer for 20 minutes until vegetables are tender.
6. Adjust seasoning as desired and serve hot.

Storage

Store in an airtight container in the refrigerator for up to 5 days.

Reheating

Reheat gently on the stovetop over low heat, stirring occasionally, until heated through.
