Hearty Cabbage and Tomato Soup
This rustic cabbage and tomato soup combines fresh vegetables and herbs to create a warming and satisfying dish perfect for any season.

Ingredients
1 medium cabbage, chopped
2 tbsp olive oil
1 large onion, diced
3 cloves garlic, minced
4 cups chicken or vegetable broth
2 large tomatoes, chopped
1 carrot, sliced
2 celery stalks, chopped
1 bay leaf
1 tsp dried thyme
1/2 tsp salt
1/4 tsp black pepper
1 tbsp lemon juice
1/4 cup fresh parsley, chopped
Instructions
1. Heat olive oil in a large pot over medium heat.
2. Add diced onion and minced garlic, sauté until soft and fragrant, about 5 minutes.
3. Stir in chopped cabbage, carrot, and celery, cooking for another 5 minutes until the vegetables begin to soften.
4. Add broth, tomatoes, bay leaf, thyme, salt, and pepper to the pot.
5. Bring to a boil, then reduce heat and let simmer for 30 minutes or until vegetables are tender.
6. Remove bay leaf, stir in lemon juice and fresh parsley before serving.
Storage
Store in an airtight container in the refrigerator for up to 4 days.
Reheating
Reheat gently on the stove over medium heat until heated through, or microwave in a microwave-safe bowl for 2-3 minutes, stirring halfway.
